A Day of Eats III + A Cardio Interval Workout

I have been trying to get back on track and really pay attention to my diet and exercise. I am doing a great job with exercise, especially since joining ClassPass. My eats on the other hand are struggling but I am working on it and hope to make improvements each and every day.

I started my Monday morning off with a 30 minute interval workout on the treadmill. Sometimes when I need a little extra push, doing an interval workout helps because it keeps things interesting and really gets my blood flowing and heart rate up. When I did this workout I could of kept going for a few more reps but I had to go to that thing called work… 

Cardio Interval Workout

I eat breakfast at my desk most days, because I workout and get ready at the gym in my office. Because we were in Vermont all weekend and didn’t get home until late which  meant no grocery shopping or meal prep :(. Resulting in eating lots of bars…

Thats it bar and coffe

Breakfast: That’s It bar and Coffee with Almond Milk. That’s It bars are actaully really good and remind me of a fruit roll up. This one is made up of 1 apple + 12 strawberries!

Brussel Sprouts and Chicken Sausage

Lunch: Leftover roasted brussel sprouts and chicken sausage. And an apple (unpictured).

Luna Bar - Lemon Zest

Snack: Lemon Zest Luna Bar which I find so delicious.

Julia is home from skiing in Europe and brought 10 ski bags with her…. TEN! The ski bags are not small and completley filled the car [to the brim]. We crammed in all the skis and Julia had to squeeze into the very little open space for us to drive home. Very safe I know!

Figs Pizza Figs Pizza

Dinner: We ordered pizza from my favorite place, Figs. It is a Todd English restaurant and the pizza is amazing. We ordered two pies and split them half/half so we could have 4 different typs of pizza (from left to right).

1. Bronx Bomber: pepperoni, tomato sauce, mozzarella, fresh basil
2. Oliver’s: tomato sauce, mozzarella, basil
3. Portobello: portobello, wile mushroom puree, red onion, fontina, truffle oil
4. Roasted Pulled Chicken: provolone, basil oil, caramelized onions.

They are all so good- my favorite is the Protobello Mushroom and I don’t even like mushrooms that much! The Roasted Pulled Chicken is a close second…

As I mentioned above, my diet is struggling… if you haven’t noticed I have been eating a ton of pizza… maybe that’s why the scale isn’t budging! :)

After dinner, my stomach was killing me. I have been have some IBS flare up’s lately so I laid on the couch and quickly realized I should just go to bed.
