Tonight is going to be a super quick dinner. Luckily I stocked up on roasted whole chickens when they were on sale. I pre-chopped and shredded them and stuck them in the freezer. That means that tonight all I have to do is toss some chopped chicken with salad, dressing, cheese and tomatoes and I am ready to serve!
