INGREDIENTS
~1 1/2 cup all-purpose flour~ 1/2 cup sugar
~ 1/4 teaspoon cinnamon
~ Zest of whole lemon
~ 1/2 teaspoon of salt
~ 1 teaspoon baking powder
~ 1/4 cup olive oil
~ 1 egg
~ 1/2 cup of milk (I used half the cup for milk and the other half for buttermilk, so I mixed the two.)
~ 1 teaspoon of vanilla extract
~ 1 cup of blueberries
FILLING
~ 1 teaspoon of buttermilk
~ 1 teaspoon of sugar
~ 3 Tablespoons of cream cheese
~ 1/2 teaspoon of lemon zest
Directions
Preheat the oven to 400 degrees
Mix all the ingredients (except the filling ingredients) in a bowl....of course, starting with the flour...
salt...
baking powder....
cinnamon...
sugar...
lemon zest...
olive oil...
egg...
milk... and buttermilk...
vanilla and blueberries....
and of course mix it together...
Set aside, and start making the cream cheese filling...start with the buttermilk and lemon zest...
sugar...
cream cheese...
Mix it together... Now, put muffin liners in a cupcake/muffin pan...scoop a little bit of the muffin batter/dough into a liner...just enough to cover the bottom... Then spoon about a teaspoon of the cream cheese filling in the center...and cover it up with a little bit of muffin batter/dough
Put them in the oven for 19 minutes...
Remove and let them cool (Or take a ZILLION pictures of them as I did...)
