Creamy Pesto Sausage Pasta

I love pasta. I love pesto. I love sausage.

This pasta was so delicious and so easy to make. I love that it blended together so many flavors and ingredients that I adore. It is fairly healthy for a creamier pasta and Ryan really liked it as well. I used very low calorie chicken sausage, but we love using turkey sausage too.

Creamy Pesto Sausage Pasta
serves 3-4

- 3 chicken sausage links, casings removed (we used italian)
- 1 cup chopped onion
- 1 clove minced garlic
- 1 box whole wheat penne pasta
- 8 oz sliced mushrooms (I used canned)
- 2 tbsp pesto (I recommend Classico brand)
- 1/4 cup 1/3 fat cream cheese
- 1 can petite diced tomatoes, undrained
- Feta cheese/Parmesan cheese

1. Preheat oven to 375 degrees. In a large non stick skillet, brown the sausage. Add in the onions and garlic and cook for an additional 3-4 minutes.

2. Bring a large pot of water to a boil and cook the pasta until just al dente. Drain.

3. Add mushrooms, pesto and cream cheese to the skillet. Once the cream cheese has melted, add in the can of tomatoes, undrained.

4. Pour the pasta into the skillet and mix well. Transfer the pasta into a large glass casserole dish. Sprinkle feta and parmesan on top. We love cheese! You can add as little or as much as you want! If you do not want to add cheese, you can serve straight from the skillet.

5. Bake for 10-12 minutes and serve!
