Feed Zone Quiche

I have done zero holiday shopping. I started to look online for gifts because going to the mall just isnt in the picture. Not only do I hate to shop, but I hate aimlessly wandering around even more and when I have no idea what to get people for Christmas I end up aimlessly shopping. That is not for me.

Although, I am thoroughly enjoying sitting in front of the Christmas tree and listening to the Holiday music!

Last night, I made Vinnie and I dinner with whatever we had in our fridge and it turned out great! I ended up making a quiche based off a recipe the FeedZone Cookbook.

My brother gave me this awesome cookbook and I look at it all the time. It is all about food for athletes, how to eat to maintain energy and recover quickly. The recipes are all tailored to help you optimize your performance.  I am slowly starting to experiment with some of the recipes!

The recipes are super simple and easy to follow, even I can do it! They don’t require a ton of super crazy ingredients; most of the recipes call for things already on my shopping list. That is something I find super helpful because sometimes I think cookbooks are so complicated and every recipe requires me going out to the store to get all the ingredients which is why I don’t ever make anything new!

This quiche was really easy and really good! The main ingredients were eggs, frozen veggies and cheese. I baked it all in a pre-made pie crust for about 35 minutes and had a sweet potato on the side.
The best part about making a quiche is there are always left over for breakfast and lunch the next day!

Workouts so far this week:
Tuesday: 3.2 miles, 25 min
Wednesday: 4.2 miles, 33 min
Thursday: OFF
Friday: 7.3 miles, 56 min – I was not planning on going this far but I got lost! Oh well, it was a great run nonetheless.
