Feeling Good

It’s crazy how every day and every week is so different. Last week I was so lethargic and unmotivated. I could not get myself out of bed and the thought of working out made me sink farther into the couch! This week, I am fully energized, super excited to work out and highly motivated! Crazy! I have woken up at 5:45 the past two mornings and done a ‘Booty Call’ – 30 minutes on the elliptical! This morning I even did a quick total body workout too.

After my morning workout, I had a bowl of oatmeal for breakfast.

In the mix:
1/3 oats
1 tbsp raisins
1 tsp cinnamon
stevia

Because traffic is light during this holiday week, I have a little extra time, so I enjoyed this yummy bowl of oats with my coffee while watching the news. It was delightful!

Last night, after work, I did my half marathon training and ran 3 miles. It was a shorter run for me so I tried to push myself, and it ended up being a pretty challenging run. I have no sense of pace so when I thought I was running a 7 min mile, I was actually running around an 8 min mile. And then when I thought I was jogging I was actually going around 7:30 – go figure!

After my run, I was hungry and craving some protein so I made some creamy eggs.

I sautéed some onions in EVOO until they were caramelized, then I added 1/3 cup egg whites with 1 egg and scrambled. I added parmesan cheese at the very end. I had some fire roasted tomatoes on the side (slash I mixed it all together!) It was very flavorful and satisfying. I could eat eggs for every meal!

I am excited to have tomorrow off. We aren’t doing much – just hanging with friends. Tonight is probably the big night since no one has to work tomorrow! Not sure yet what I’ll do… I have been liking relaxing and getting a lot of sleep. But, it is the 4th, I should probably do something… we will see :)
