Italian Pasta Salad

I wish I could say I am having more success finding a work/life balance, but I am not, which is why my blogging has been sucking (to say the least). To add to my lack of time, my computer is totally shitting the bed, so it makes it really hard to write a blog post and upload pictures. I will figure it out, I promise, because I do miss holding myself accountable through the blog and sharing with all of you my daily workouts and adventures!

At a minimum I am trying to get 30 minutes of exercise in a day. Whether it is yoga, HIIT, or a walk, it doesn’t matter as long as I take that time for myself and make it happen.

Italian Pasta Salad

Yesterday I went to Black Crow Yoga Studio and took the Flow to Music class. It was amazing! Yoga is like therapy for me. It makes me relax, stretch and forget the day! The class yesterday was a vigorous, athletic yoga with a focus on connecting breath to movement through a continuous sequence of postures. The whole class was put to music which happened to be my favorite songs so it made it even better. I felt like I was listening to Florence and the Machine Pandora station.

Before dinner I snacked on some fruit! I think I could live off of fruit. It is so good and never gets old!

Atter yoga, I had a cheddar cheese burger with mustard and ketchup and some homemade pasta salad on the side.  The pasta salad is so simple to make. All you have to do is make the pasta, chop the veggies and mix in the dressing. Easy peasy! Italian Pasta Salad

Italian Pasta Salad
1 box bowtie pasta
3 large carrots, chopped
1 green pepper, chopped
1/2 purple onion, chopped
1/2 bottle Italian Salad Dressing ( I used Kraft, but you can use whatever you want!)

Cook pasta according to the instructions on the box. Let it cool and then add the veggies and dressing. Mix together thoroughly. Put in the refrigerator for an hour to set. Serve chilled.

I know summer is coming to an end but this is the perfect recipe to bring to cookouts and BBQs. It is so simple, easy and delicious. You can add whatever you want to make it unique! I highly recommend it!
