Lazy Summer

What does “vacation” mean to you?

Sleeping in, following your own schedule, lounging, reading, spending time with friends. And swimming, if you can find a lake!

We have “cooking crews” for dinner each night; one team prepares a big meal (including cocktails and appetizers) for all of us. It’s no small feat cooking for 40 people! One night we had homemade margaritas, chips + guacamole, and hot wings during cocktail hour.

Another night for dinner, we had assorted tacos (chicken, pork, tofu) with black bean + corn salsa and cabbage-cilantro cole slaw.

We take our food very seriously, as you can see.

I’ve been obsessed with one particular sandwich of late: on good, toasted bread, I layer spinach, cheese, hot pepper jelly, an Amy’s veggie burger (I love the All-American and California varieties, so we bought both!), and fresh peaches. The peach and jelly really make it!

The hot pepper jelly came care of Jenkins Jellies, an LA based company started by actress HIllary Danner (Gwyneth Paltrow’s cousin!) and two friends.

The jellies come in three other flavors as well- passion fire, guava brava and fiery figs- and source organic ingredients when possible.

Each jar comes with a cute little spoon to stir up the hot-but-sweet jelly. I loved it on my sandwich, especially when paired with savory melty cheese.

So as you can see, we’ve been eating well and playing hard so far! B and I have been taking long, leisurely walks at the end of the day; it’s a nice, relaxing way to wind down for the evening.
