Wednesdays Unplugged - No Fail Popovers

NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes...and love getting recipes you would like to share!

Ann40 We celebrated our 40th wedding anniversary on Saturday evening with friends who got married in Chicago the same day we were married in a little country church in North Dakota... had a great dinner at the new downtown CRAVE. Then on Sunday, the day of our actual anniversary, I got my foot caught in my wide pant leg on our way out and fell on the stairs... resulting in a trip to ER. I tore finger ligaments, cracked a rib and got some colorful bruises... an anniversay to remember!

RECIPE OF THE WEEK

This week's recipe is another one from my Breakfast Club, which has fabulous cooks! This recipe comes from Kay, who says she isn't sure if the no fail part comes from the recipe or from her Nordic Ware popover pan.

NO FAIL POPOVERS

  • 3 large eggs
  • 1 cup whole milk
  •  3 tablespoons melted butter
  • 1 cup flour
  • 1/4 teaspoon salt

With electric hand mixer, mix ingredients to blend. Fill cups 1/2 full with batter.  (I grease the cups with a little butter first, it can't hurt).  Bake in convection oven at 400 degrees for about 35 minutes.

For non-convection ovens, preheat oven to 450.  Bake popovers in the middle of the oven for 20 minutes.  Reduce oven heat to 375 and bake for 20 minutes more, or until they are golden brown. Serve immediately.
