Weekly Wrap Up Linky – Cornflake Cookies

Inspired by this recipe, I decided to change it up a bit by adding dried cranberries and white chocolate. They certainly did not turn out looking symmetrical or like anything pinworthy, but they taste great :)

Ingredients:

125g butter, softened
1/3 cup brown sugar
1 egg
1 cup self-raising flour
1/2 cup dried cranberries
125g White Chocolate Baking Chips
2½-3 cups corn flakes

Method:

  1. Cream together butter and sugar until light and fluffy. Add the egg and beat well. Stir in flour and then the cranberries and chocolate.
  2. Drop tablespoonfuls of the mixture into the cornflakes and roll to coat. Place on a lined baking tray. Repeat with remaining mixture.
  3. Bake for 15-20 minutes on 180°C or until cooked. Cool on a wire rack. Store in an airtight container.
