I'm bringing you a great recipe today!
I have seen recipes forever on Pinterest for an "Italian Chicken" you make in the crockpot. My big beef with those recipes is that they looked WAY too thick and creamy and that came from them being a bit unhealthy.
So I decided to take that concept and make my own recipe...one that was healthier.
My Italian chicken recipe only needs four ingredients along with chicken breasts and a crockpot. It was one of the easiest meals I have made in a long time. Ryan loved it, so it will now be in our frequent dinners rotation.
After the chicken is done, serve it over rice or pasta. The recipe below was able to mix with an entire box of whole wheat rotini. That gave us 4 big portions, so Ryan and I had lunches the next day too (:
Italian Chicken
3-4 servings
Ingredients
2 frozen chicken breasts
1 packet zesty italian dressing mix
1/2 cup milk
4oz 1/3 fat cream cheese
1 can healthy request cream of mushroom soup
Directions
1// Spray crockpot with cooking spray and place chicken breasts in the bottom. Sprinkle italian dressing mix over the top.
2// In a large bowl, mix milk, soup and cream cheese. Pour over the chicken.
3// Cover the crockpot and cook on high for 3-4 hours or low for 5-6. Remove chicken and cut into chunks. Return to sauce and stir.
4// Serve over rice or pasta.
