It’s MIL’s birthday today and we went over yesterday afternoon to see her and to give her her present.
I wanted to take a cake so we could sing happy birthday to her. B1 and B2 love the whole cake, singing and blowing out the candles thing ATM.
As it was mid morning before I decided on it I was pretty pressed for time. I remembered I had some packets of butter cake mix left over from the twins 2nd birthday cake extravaganza, so decided to just use one of those. But I wanted to make something yummy and different, not just a plain butter cake. So I experimented and came up with this creation.
For those who have more time or wish to, of course you can use any basic cake mixture you desire. Packet mixes are seen by some as a cheaters way of claiming you have made a cake But as I had very little time and some packets that needed to be used, I went with it.
Ingredients:
Cake:
1 packet of butter cake mix or your ingredients for a basic cake mixture
2 eggs
2/3 cup milk
3 tablespoons butter or margerine
1 apple (any you like, I used pink lady)
2 teaspoons cinnamon
Glaze Icing:
1 cup icing sugar
1 tablespoon butter
2 tablespoons milk
1 teaspoon cinnamon
Method:
Cake:
Preheat oven to 180′C.
Grease your cake tin or line with baking paper.
Mix cake mix, eggs, milk and butter in a bowl.
Peel and then grate your apple. Discard (or eat as I do) your apple peel and add the grated apple to your mixture. Stir through.
Add your cinnamon and mix well.
Pour the mixture into your cake tin and bake for approx 45 minutes, until the cake springs back when touched lightly in the center.
Once cooked, allow to cool.
Place your cake on your desired serving plate or tray.
Cinnamon Glaze Icing:
Half fill a small saucepan with water and bring to the boil, then lower the temp so it is simmering.
Place icing sugar in a small heat proof bowl.
Stir in the butter and milk to make a paste.
Place the bowl sitting in the saucepan, over the simmering water. Don’t allow the bottom of the bowl to touch the water.
Stir until the mix is quiet runny and then stir in your cinnamon until well combined.
Next drizzle the icing over the top of your cake. You can make any pattern you like and put as much or as little icing on the cake as you like.
