Apricot Chicken

I have only ever cooked Apricot Chicken using a pre made sauce from a jar.

I came across a recipe for Slow cooker apricot chicken on SAHM that I thought I would like to try and as with all my other finds it got bookmarked for later use. One day a few weeks ago, I had some chicken breast in the fridge that needed to be used that day. Straight away my memory jogged back to the apricot chicken. My problem was that it was to late in the day to do anything in the slow cooker for it to be ready for dinner that night so my little mind got to thinking and I decided to give it a whirl using similar ingredients in the fry pan. To my utter delight it turned out great and took very little time and effort.

Apricot Chicken

Ingredients:

1 double chicken breast (SAHM used chicken legs)

1 large onion cut into rings

2 packets of french onion soup

1 large tin of halved apricots

Method:

Fry onion rings until golden.

Cut chicken breast into chunks and add to the fry pan, cooking until brown.

Pour the 2 packets of french onion soup over the chicken, then pour in the can of apricot halves. Stir well.

Cook on high whilst stirring for another few minutes before turning the heat to low and simmering for another 5 minutes or until all ingredients are heated through.

This was a big hit with both hubby and the twins. :-)

You could serve this with rice, mashed potato or with steamed vegetables.
