For Cooking Class this month, we changed it up a bit.. and had BREAKFAST for DINNER!

This wasn't your plain jane lucky charms and milk at 6:30pm either. Before I share the details, I admit I am not a Breakfast for Dinner kind of girl. BUT this was GOOD! like really really... GOOD!
Before dinner & while we cooked- we all enjoyed a couple of brunch style cocktails! You got it- Mimosas! Sally brought a fun drink too. A Chambord Kir Royale, these were pretty strong but very good. It was incredibly thoughtful of Sally to bring a new drink for everyone to share.

While speaking about new drinks, instead of your classic Mimosa, we served what you call Mama-Mangos! YUM... YUM-O!! If you ever see a bottle of this stuff while out and about, pick it up! It's a bottle of Moscato & Mango Juice- all you have to do is shake, pop the cork and pour! You won't believe me on how good this is until you try it- so pick it up tonight, on your way home.

Our featured product was Wildtree's Buttermilk Pancake Mix so of course we had pancakes- but these brunchy pancakes were extra tasty Lemon Ricotta Pancakes, served with fruit salsa & maple blueberry jam syrup- they were like dessert!

To go along with our pancakes & fruit salsa; we also had Waffle Iron Cajun Hash browns (YUM!) and a Ham & Asparagus Frittata (double YUM!!). We also had a sweet serving of Petite Caramel Pecan Rolls- but with the deliciousness of said pancakes, these weren't really needed, as I mentioned the pancakes were the perfect amount of sweet!

With the regular Tuesday class being canceled, there was only one large class this month. All 13 of us enjoyed every last bite of food, there literally was NOTHING leftover except one tiny pancake (which I devoured the next morning for real breakfast!)
* April Cooking Class[p.s. for a little while everyone cooked i walked around w/ jen's cutie, mr. nolan. we had fun talking with everyone and about what they were working on.]
We had a great group of women this month- and I am VERY VERY excited to be hosting another class yet this month! The MN Bloggers are having another meetup and it will be a cooking class, this Friday! This is a great group of ladies and I can't wait to see how much they enjoy a night of good cooking!
