Happy Monday!  I had a good weekend, though I felt I could have used at least one more day in the sunshine...  yesterday was a busy day, and my body is feeling it!  I was doing dishes at the kitchen sink with the window/door open for fresh air when I was dive bombed by a HUGE bumble bee!  I screamed so loud, I heard my neighbor say; "What was that?"

Bees, Yardwork, Vegan Chili and Gluten Free Cornbread I am not a fan of bees... I have not been stung before(knock on wood) but I know that members of my family are very allergic - so I'm extra scared!!!  If this isn't the queen - I don't want to meet her...

I thought I'd snap some before pictures of the backyard.  Graham did some planting, and we began cleaning up the area to get ready for summer!

Bees, Yardwork, Vegan Chili and Gluten Free CornbreadThere is nothing like a home-cooked meal after yard work!  It's still cool enough for comfort food - so I whipped up some tasty chili.
Bees, Yardwork, Vegan Chili and Gluten Free CornbreadVegan Chili; so simple, tasty, and filling:-Saute onion, garlic, celery, bell pepper-throw in some carrots-add tomatoes and spices(I used cumin, chili powder and salt)bring to boil for 20 minutes-add in 2 cans of kidney beans-simmer on low for as long as you'd like.  I simmered it for 2 hours on the stove.Bees, Yardwork, Vegan Chili and Gluten Free CornbreadWhat's chili without cornbread?  I made my gluten free and it turned out pretty well!Gluten Free Cornbread:-1 cup cornmeal-1 cup garbanzo bean flour-1 egg-1 cup almond milk-1/4 cup melted earth balance spreadPour into greased 8 inch baking pan, bake at 425 for about 25 minutes.  I spread a little more Earth Balance, and Honey(of course) on top!  Tastes really good dipped in the chili!!
