Bees, Yardwork, Vegan Chili and Gluten Free Cornbread

Happy Monday!  I had a good weekend, though I felt I could have used at least one more day in the sunshine...  yesterday was a busy day, and my body is feeling it!  I was doing dishes at the kitchen sink with the window/door open for fresh air when I was dive bombed by a HUGE bumble bee!  I screamed so loud, I heard my neighbor say; "What was that?" 
After the bee angrily flew against the window, he dove right into my dishwater!!! After I was quite convinced that he was not still alive, I fished him out of the water - very carefully...
 I am not a fan of bees... I have not been stung before(knock on wood) but I know that members of my family are very allergic - so I'm extra scared!!!  If this isn't the queen - I don't want to meet her...

I thought I'd snap some before pictures of the backyard.  Graham did some planting, and we began cleaning up the area to get ready for summer!

There is nothing like a home-cooked meal after yard work!  It's still cool enough for comfort food - so I whipped up some tasty chili.
Vegan Chili; so simple, tasty, and filling:-Saute onion, garlic, celery, bell pepper-throw in some carrots-add tomatoes and spices(I used cumin, chili powder and salt)bring to boil for 20 minutes-add in 2 cans of kidney beans-simmer on low for as long as you'd like.  I simmered it for 2 hours on the stove.What's chili without cornbread?  I made my gluten free and it turned out pretty well!Gluten Free Cornbread:-1 cup cornmeal-1 cup garbanzo bean flour-1 egg-1 cup almond milk-1/4 cup melted earth balance spreadPour into greased 8 inch baking pan, bake at 425 for about 25 minutes.  I spread a little more Earth Balance, and Honey(of course) on top!  Tastes really good dipped in the chili!!
