Brownies with walnuts

These are so rich and delicious and have a very nice crusty skin on the top which I like very much....It is not as dense as most brownies but slightly cake like, the result of beating up the butter and egg I suspect. I love it for it's simplicity in making it and of course it tastes fabulous and the boys love it! The walnuts provide a nutty taste to the soft texture of the brownies and the crusty skin is just delicious!

The recipe is as follows:

1 cup (2 sticks) 225g butter (salted)

1 cup walnuts, toasted and roughly chopped

Preheat oven at 400F or 204C.

Baked in a 7 x 7" tray and 4 mini square moulds. Grease the tray and moulds well and line the bottom of the tray for easy dislodgement.

Melt chocolate and butter in a double boiler. Leave to cool while you beat the eggs and sugar in a mixer until pale and fluffy. Reduce speed to low and add vanilla extract. Then slowly add the chocolate mixture.

Next fold in sifted flour with a spatular or whisk until well incorporated. Add the walnuts and chocolate chips and fold till just combined.

Pour into the prepare tray and moulds and bake for 35 minutes (tray). I bake the mini ones for 25 minutes.

Allow to cool before refrigerating and cut into desired sizes. Enjoy!
