Buffalo Chicken Pasta
We love buffalo chicken anything.

I was craving it the other night, so I decided to make it into a pasta dish. This was so good and Ryan was sad there wasn't more to eat.

I know that blue cheese dressing can be high in calories, so I made it with the least amount of sauce as possible. I thought it was great, but it did dry out a little the next day when I microwaved it. To get a creamier, "comfort food" type dish, double the dressing and wing sauce (not the milk though). If you are counting calories, just use the recipe as is (:

Buffalo Chicken Pasta

Buffalo Chicken Pasta

serves 2-3

Ingredients

12.5 oz canned chicken breast
1/2 cup blue cheese dressing
1/4 cup buffalo wing sauce (we love Frank's!)
1/4 cup milk
2 tablespoons 1/3 fat cream cheese
6 large handfuls of penne pasta (I measure by taking handfuls out of the box)
1/4 cup finely grated cheddar cheese


Directions

1// Preheat the oven to 350 degrees. Boil pasta until al dente. Drain.

2// In a saucepan, mix the chicken, cream cheese and wing sauce until smooth. Add in the dressing and milk.

3// Pour the pasta into the sauce mixture and still well.

4// Spray a glass casserole dish with cooking spray. Scoop the pasta into the dish and sprinkle with cheese.

5// Bake for 13-15 minutes.
