Cinnamon rolls with a twist...


literally! I am not sure you can still called it roti paun but I used lena's recipe for this bread and fill it with butter cinnamon sugar and also added dates before rolling it up...Anyway, here's the recipe for record:-

Recipe adapted from lena's blog
Basic sweet bread dough recipe
A 100gm bread flour
70gm boiling water

B 300gm bread flour
100gm plain flour
20g wheat flour (trying to be healthy here:P)
80gm sugar
6gm salt
20gm milk powder (omitted)
9gm instant yeast (I used 2 tsp)

C 175gm cold water
60gm cold eggs

D 60gm butter

Filling
80g butter at room temperature
2 tsp cinnamon powder
80g sugar

Mix all the ingredients together to form a paste
50g of chopped dates

Method:
1. Add the boiling water from A into flour, mix well to form a dough. Cover and set aside to cool. Keep in the refrigerator for at least 12 hours.(I just leave it in the fridge for 1 hour and I added 80g water as I felt the dough is too dry)
2.Mix B until well blended. Add in C and knead to form rough dough. Add in A and knead until well blended. Add in D and knead to form a smooth dough. Let it proof for an hour.
3. Divide each dough into 30gms, shape into round again. Flatten the dough and spread some of the butter cinnamon filling on the rolled out dough. Add a few pieces of dates and roll it up as you would a swiss roll. Shape the rolled dough into a circle and place into pan. Repeat with the rest. Let it proof in the baking tin for another 40 minutes.
4. Bake in a preheated oven at 190C for around 12-15 minutes. Once they are out from oven, glaze with melted butter.

Since I have been told that this post does not qualify for the Malaysian Food Fest ( Terengganu month) hosted by lena of Frozen Wings I shall remove the link but do visit her blog to see her version and also to read about all the delicious food from the state of Terengganu.


I won't be posting any cooking or baking posts for the next month as I am taking a short break, so I'll go drool over my blogger friends' cooking and bookmark those that I want to try in future:)
