Cook-Your-Books # 2 - Two Flavors Financiers

These are financiers baked in madeleine and bahulu moulds lol! Financiers are very rich cakes, and usually baked in square moulds to resemble gold ingots. I have a mini square mould pan but not small enough so I decided to bake them tiny then I have more to share around and hopefully won't over eat! The recipe is adapted from the cookbook Okashi and this is the 2nd recipe that I have tried from this book. The recipes from this book are very do-able and easy to follow.

Here's the recipe with my adaption in blue:

50g pastry flour (I used AP flour)

a pinch of salt (omitted)

130g unsalted butter (I used salted)

Greentea variation: 10g greentea powder

1. Preheat oven to 220C. Lightly grease the cake moulds. Sift flour, cornflour and baking powder together twice. For greentea variation, add in the greentea too.

2. Place egg whites in a bowl and beat lightly. Add sugar, ground almonds, flour mixture and salt each at a time amd mix well. Do not overmix. Set aside.

3. Brown butter in a small saucepan over medium low heat, whisking frequently until golden brown. Pour butter into a mixing bowl and cool it by placing it over a larger bowl of ice water. This will stop it from cooking further and burning.

4. Add browned butter to flour and almond mixture and mix well. Fill the prepared moulds and bake for 10-15 minutes until light golden. Remove cakes from moulds and cool on wire rack.
