Finding something decent to make for dinner on this Weight Watchers thing is not a lot of fun. So many of the recipes are complicated of have weird stuff in them. But I’ve made a few decent meals. Tonight’s dinner for 2 was pretty good.Broiled Pork ChopHot SauceWorcestershire Minced Garlic2 boneless Pork chopsPreheat the broiler in your oven to 350 degrees.Seasoning: Mix together what you like from you pantry. Ideas are garlic powder, chili powder, Italian seasoning, or there are some very nice poultry rubs at the store. In a bowl combine the first 3 ingredients. There’s no measurement for this. Just mix it to taste.Cover the pork chops in the wet mixture on both sides. Lay the pork chop on a foil lined broil pan. Sprinkle dry seasoning on top of the chop, turn the pork chop over and sprinkle the dry seasoning on the other side. Broil the pork chop for 5 minutes. Turn the pork chop over and broil for 5 more minutes. Check the pork chop for doneness. You can move it to a lower rack to finish it off for about 5 more minutes or continue it on the top rack for a crispier chop. Serve with green beans and mashed potatoes for a nice meal. The chops are 4 WW Points Plus points for 3 oz.We used a Bob Evans individual serving of mashed potatoes (5 WW Points plus). David and I split it for 2 ½ points each. Served 1 can of French style green beans. Heated it up with some salt, pepper, and minced garlic (Zero points). Not a bad meal. David’s lost 10 pounds and I’ve lost none. We are only 4 days in. David had the flu and I think that’s cheating. But I don’t want to get the flu so I can catch up. I’ll just have to go at my own pace. KD
