
I love everything about Fall - especially the food. My family has always enjoyed making apple crisp, but usually it is pretty unhealthy and takes awhile to make. I decided to create a healthier, easy version of this Fall favorite.

I really wish we had an apple orchard out here in Colorado, but the soil doesn't make for very good conditions. Instead I headed to Costco and purchased a ton of Honeycrisp apples. These are some of my new favorites in the apple family.
After the apple crisp is finished, top with some vanilla bean ice cream for a delicious festive treat (:

Easy Crockpot Apple Crisp
serves 6-8
Ingredients
Apples
- 4 1/2 - 5 cups peeled, chopped apples (3 large Honeycrisp apples for me)
- 2 Tbsp white sugar
- 2 Tbsp brown sugar
- 1/2 Tbsp flour
- 1 tsp cinnamon
- 1/4 cup water
Crisp Topping
- 1/2 cup flour
- 1/4 cup brown sugar
- 2 Tbsp white sugar
- 1/4 cup chopped nuts (I used mixed nuts)
- 1/2 cup oats
- 1/8 tsp baking powder
- 1/8 tsp baking soda
- 1/4 cup butter, melted
Instructions
1. Spray crockpot with cooking spray. In a large bowl, mix all "Apple" ingredients except for the apples. Once mixed, stir in apples and make sure they are coated. Pour the apples and any leftover mixture into your crockpot.
2. In a second bowl, mix all dry "Crisp Topping" ingredients. Lastly, stir in melted butter and mix until it forms a crumble topping. Sprinkle topping over the apples in the crockpot and cover with the crockpot lid.
3. Cook for 2-3 hours on high or 4-5 hours on low. Serve warm.
