Easy Ranch Chicken & Rice

Sometimes you're looking for a quick meal with only a handful of ingredients.

This does not mean you need to reach for the Hamburger Helper or mac n' cheese...

This recipe only needs 5 ingredients and is so simple.

It's easy, hassle free and REALLY delicious.


Easy Ranch Chicken & Rice

serves 2-3

Ingredients
- 2 large chicken breasts, butterflied in half
- 1 can healthy request cream of mushroom soup
- 1 cup milk
- 1 packet ranch dressing mix
- Rice

Instructions
1// Make sure your 2 large chicken breasts are butterflied into 2 pieces each. This will give you 4 thin breasts. Heat some olive oil in a large skillet over medium heat. Place the 4 breasts in the pan.

2// In a large saucepan, make rice according to the package. We used brown rice and made 1 1/2 cups. I also suggest using chicken broth instead of water to boil it. Much more flavorful. Once you place the water (or broth) and rice in the pot, add in 1/4 of the ranch packet. Finish cooking the rice as directed.

3// Cook the chicken 5-7 minutes per side, until browned. Then, add in the soup, milk and remainder of the ranch packet. Stir and cover the skillet. Reduce the heat to medium low and simmer for 15-20 minutes.

4// Serve chicken and sauce over rice.
