I am pretty impressed with this vegetable slice. I have made it twice now and it has been a huge hit. I can’t take credit for the recipe. It’s from one of my favorite foodie blogs, Exclusively Food.
Through this recipe I discovered how simple it is to roast capsicum (under the grill) and it tastes sensational. It has all the favourites in it; grated carrot, zucchini, cheese as well as onion, capsicum and corn. It’s a great light meal accompanied with a Summer salad.
