Greek Lemon Blueberry Muffins

Our church’s pastor and his wife welcomed a new addition to their family a few weeks ago.To help ease their sleepless nights and new transitions, the church organized a meal train to provide them dinner for a few weeks.

By the way, meal train is an amazing site if you’ve never used it.It allows you to see the family’s allergies and food preferences and lets you see what other people are bringing so the family doesn’t end up with 4 nights of lasagna.
Since I’m not that great with developing dinner recipes, I thought I would create a new dessert recipe instead.With late night feedings and diaper changes, new parents need as much energy as they can get.And what I better way to increase your energy then to up your protein intake.
So I decided to reinvent the lemon blueberry muffins with an infusion of protein laden greek yogurt.   Hope you enjoy these super healthy greek lemon blueberry muffins.
Greek Lemon Blueberry Muffins

Ingredients:·   2 cups whole wheat flour·   1/2 cup agave nectar·   1/4 cup honey·   1 tbsp baking powder·   1/2 tsp salt ·   1 1/4 cup lemon greek yogurt·   Juice and rind of 1 lemon·   1/2 cup applesauce·   1 cup blueberries·   1 tsp lemon extract
Method:Preheat your oven to 400 degrees and coat a muffin pan with nonstick spray.

Rinse off blueberries and evenly coat them with 1 tablespoon of flour.

In a large bowl, add agave nectar, honey, yogurt, lemon juice, lemon extract and applesauce.For the lemon juice, you can just squeeze the juice of 1 lemon. 

 Whisk wet ingredients together until smooth. 

In a separate bowl, add flour, baking powder, salt and rind of leftover lemon. 
Mix together dry ingredients.

Add half of dry ingredients to wet mixture and mix together.  

Add rest of dry ingredients and mix until incorporated. 


Add blueberries to bowl and fold gently. 

Evenly divide mixture between 12 muffin cups.

Bake muffins for 20 minutes.
Remove muffins from oven.Allow them to cool in muffin pan for 20 minutes.Then remove them onto drying rack to cool completely. 

These muffins were really moist and extra healthy. 

Only 85 calories and 5 grams of protein a piece, these muffins are the perfect midnight snacks.
