Homemade Macaroni Salad

Confession time: I am a sucker for macaroni salad, and I’ve always wanted to create it at home for myself to enjoy.

Well, I finally sat down and decided how I wanted to make my salad and am so happy with the outcome.  I even made a double batch so guess what I’m eating all week?

Ingredients needed:

1 Box Elbow Macaroni

3 Hard Boiled Eggs

1 TBSP Apple Cider Vinegar

1 Cup Mayonnaise

1 TBSP Dijon Mustard

3 Stalks Celery, diced up

1/2 Red Onion Diced Up.

Directions:

Cook Pasta According to Directions.  Cut up Celery, Onion and Eggs.  Mix together with finished pasta.

In a small bowl mix together mayonnaise, mustard and vinegar.  Stir together then stir into the pasta mix.  Stir, Stir, Stir.  Let cool down in the fridge for at least a half hour then enjoy. It really is that simple.  I’m that “no fuss” kind of girl.
