Hummus and WIAW

It’s Hump Day! Half way through the week. Yipeee.

I woke up this morning and enjoyed a cup of coffee while watching the news.

After a rough weekend, I am trying to eat more fruits and veggies this week to settle my stomach and get back to feeling normal. At the store, I loaded up on colorful bell peppers, carrots and celery to snack on throughout the week.
But then, I had to make something to dip all these veggies in, so I decided to take a stab at my first ever homemade hummus.

It was way easier than I ever imagined. I sometimes shy away from things that require using a blender because I think it will take time and make a mess. Yes, it is a little harder to clean up but it was so simple to make. And in the end it is way cheaper than buying the store-made brands. Plus, I get the added bonus of controlling exactly what is in the recipe.

The hummus turned out super creamy and smooth. A serving is about 2 TBS and has approximately 50 calories.
It’s the perfect healthy dip for veggies, spread for sandwiches, or dressing for salads.

I ate a ton of hummus and veggies throughout the day. Breakfast was an apple and grapefruit. Lunch was hummus and veggies. Dinner was a sweet potato and salad with loads of veggies and hummus. I failed miserably at taking pics, sorry [mybad].
But, I didn’t forget to take pics of my not so healthy treats!

I finished my day of eating with a delicious piece of Endangered Species Mint Dark Chocolate. It is so good and very satisfying. This chocolate is certified gluten free, organic, vegan and kosher. They buy their cacao from small family-owned properties, helping sustain the local habitats and communities and are 100% ethically traded. 

Last week, Vinnie quit his job (I know, crazy right!). He has a new job lined up and he starts next week, so he is taking this week to relax. To celebrate his vacation we enjoyed a bottle of wine together. This Kenwood bottle is a Sonoma County Cabernet Sauvignon and was especially smooth yet flavorful. I love red wine.

Vinnie’s new job in Boston which means we are looking to move closer to the city (wahoo). I have always wanted to live closer to Boston and be in more of a city setting. I am going to miss the beach and seaport lifestyle, but it is not far and I know we will be coming back up here all the time. Things are changing; its exciting but scary all at the same time.
