Is Something Burning?

Then get away from the grill y'all. 
Did I ever tell you about the time my hair caught on fire from standing too close to the grill? I have naturally curly hair, so when I use product, I use A LOT of it. If I don't its a scream to look at. Well, one summer day my Dad was grilling corn and when he lit the flame, he put the gas too high, and it blew up. I was standing just feet away and when he looked at me to make sure I was okay, my hair was smoking. Yes, it had caught fire. So now, when I want grilled corn, I use the oven. 
It's safer and less traumatic.
Seriously. 
My hair never caught fire, but it was believable right? Man, I had you guys going. I wish I could have seen your faces. In all actuality, I do have curly hair, and I do use a lot of product, but it never caught fire. Oh, that was hilarious. Sorry if you are offended. On second thought, no I am not. It made for a better blog post. 
Honestly, I do have a great and easy "grilled" corn recipe. Grill not required. I live at an apartment complex, as many of you do, and the accessibility to a grill is minimal. We have the same group of dudes hogging the grill every single day and night, so we don't get to grill too often. We also don't have one of our own yet, which is fine because its too dang hot to grill anyway. I can't handle the heat as it is. So, if you can't handle the heat, stay in the freakin air conditioned kitchen! Right y'all? 
Here's the (read: ridiculously easy) recipe for... Is Something Burning?
What You'll Need:
Any number of ears you will need (corn that is)
Butter or a butter subsititute (I used I Can't Believe It's Not Butter Spread)
Salt
Pepper
2 to 3 limes
aluminum foil
What You'll Do
Preheat your oven to 425 degrees
Shuck the corn (that's what we call it): Basically, remove all outer leaves and try to remove as much of the stringy stuff as possible. Rinse under cold water.
Place the corn on the foil
 Spread one side with the butter spread
Squeeze approximately two Tbs of lime juice on ear
Sprinkle with salt and pepper
 Creating the Pocket
Bring up either side of the foil and hold together
Fold the sides over two or three times until you reach to the ear of the corn (do not scrunch)
Squeeze the sides of your aluminum foil pocket at the ear and twist to create a closure
Then fold up the ends so that they are secured together
Place ears on the rack and bake for 20 to 25 minutes
Remove from oven and place on cooling rack
Allow corn to slightly cool and open pockets carefully (it WILL be HOT)
Remove corn from foil and place pat of butter on corn
You can squeeze additional lime juice for flavor or add lime zest to corn
Season with salt and pepper to taste
You can top with cilantro, mint, or any other flavorful herb.
Lemony herbs work best with this recipe.
Then devour and floss (corn kernels in your teeth is not HOT).
