It’s What’s for Breakfast!! Latkes…

This is a great recipe for the long weekend when you either have lots of people to feed, too many potatoes, or just love deliciousness!!! Super easy with ingredients you already probably have in your kitchen.

All you need is the following…adjust your amounts according to how many you are feeding.

This makes enough for about 3 people or 8 Latkes.

Ingredients:

2 Large Potatoes

1 Egg

1/2 chopped onion (chop it fairly thinly)

2 Tbsps flour

Salt and Pepper to taste.

Take all ingredients and mix them together in a bowl.

Heat some vegetable oil in a frying pan, you want it to be fairly hot before you add the potato mixture. Take about 4-6 tablespoons (per Latke) of your potato mix and add to frying pan, flatten it out with a spatula, you want it like a pancake…cook for about 6-8 minutes per side. I like mine to be very soft in the middle and crunchy on the outside. So I do it a bit longer than that.

Add a bit of butter when you put them on the plate and a side of ketchup…yummy!!!
