Little Boy Bakes: Chocolate Chip Muffins
Tyne has always loved baking - I first started doing simple fairy cakes with him when he was about 12 months old which I know is very young, but it was mostly me doing everything and him happy to watch and occasionally do some stirring!
Ever since then we've baked occasionally but, because I am not a very good baker and definitely a lazy one, I would always tend to just buy the packet mixes that supermarkets sell to make Spiderman or Thomas cupcakes with those little edible wafer decorations on the top - he loved doing those and they were enough to keep him entertained.
But now that he's 3, I thought I'd start to broaden both of our culinary horizons a little and try to make things which require slightly more effort.
I've started to do some cooking or baking with Tyne every single Sunday and he's used to that routine now so every Sunday he asks "What can we make today, Mummy?"
So far we've made some things for his dinner such as DIY Pizzas and Homemade Chicken Nuggets (both were a big hit!), but he always has the most fun doing baking recipes!
I'm going to share some of baking/cooking efforts on the blog once a month, trust me they will be all be simple easy to make things because I do not do complicated in the kitchen!
Last week we made Chocolate Chip Muffins at Tyne's request - here's the recipe we used:
Little Boy Bakes: Chocolate Chip Muffins
Ingredients:
*300g Self Raising Flour *80g Caster Sugar *1 tsp baking powder *50g Unsalted butter *225ml Milk *1 teaspoon vanilla extract *2 eggs, lightly beaten *150g chocolate chips (we used plain but milk or white is fine!)

Method:
*Preheat oven to 200c (or 400f)
*Mix the flour and baking powder together, and add in the butter - rubbing it together between your fingers until it's like breadcrumbs (Tyne loved this part!)
*Stir in the sugar and the chocolate chips
*In a separate bowl, mix the eggs, vanilla extract and and milk together and then add to the dry ingredients - mix together.
*Spoon the batter into lined muffin tins or whatever you're using (I used muffin cups) and bake for 15-20 minutes or until golden and risen. Allow to cool for 10 minutes and serve!
