One of my favorite foods is beetroot. I love it in salads, on toast, in sandwiches or I could quiet easily eat a whole tin as a snack. I love the bright color it adds to any dish.
The last 6 weeks (due to the awesome morning all day sickness) I have felt terrible to say the least and the range of foods that I can barely even think about eating is not very large. I have basically been living off Weetbix, Vegemite toast, bread sticks dipped in Vegemite, soup or BBQ chicken. A few weeks ago I decided to add sliced tomato and sliced beetroot to my lunch of BBQ chicken on a slice of bread. It went well. Beetroot was back in my limited diet. So when the opportunity came up for me to try a wonderful new product, Love Beets, I was excited.

I decided to make a vegetable bake with my Love Beets.
It was delicious if I do say so myself. The whole house smelt amazing while it was cooking.
I just cut up into chunks:
2 x carrots
1 x medium size sweet potato
1 x zucchini
1 x 250gm bag of Love Beets, drained
I placed them all in a baking dish. Drizzled with olive oil and sprinkled mixed herbs over the top.
Then I baked it in the oven at 190 Degrees Celsius for approx 25 mins.
Love Beets tasted great. They are not as sweet as the tinned beetroot I am used to. I would say that is because they are 100% beetroot. No sugar, salt or additives.
