Yesterday’s lunch was a big bed of baby romaine lettuce, topped with cherry tomatoes, shredded carrots, and black olives. I dressed it with a homemade mixture of olive oil, red wine vinegar, salt and pepper, lemon juice, and a sprinkle of nutritional yeast. The whole thing only cost me 130 calories, and all those veggies make me feel so good! In hindsight, however, my o-negative blood type does require a lot more protein to keep me feeling satisfied for the rest of the afternoon, and I should have added in some chicken breast or shrimp.
