This month (like last year) the kitchen was crowed with a lot of creations that involved both corned beef & kraut! yummmmmmmm
* March Cooking Class
I was able to be at both classes yet again- the first class (again like last year) Katie and Parker came! While the kids played, snacked and kept us Mom's busy- everyone else cooked. Katie and I ended up being the taste testers.

  Class two I was there solo, so I was able to once again enjoy the company and all of the food! Our menu included; Irish Nachos, Hot Reuben Dip, Guinness Pie (much like a pot pie w/ carrots, brussels & corned beef) & Reuben Roll Ups. Every thing was so so soooo good! My favorite being the Irish Nachos. The March Product of the Month is one of my favorite blends that can be used for SO many things! Wildtree's Onion & Chive Blend- add it to anything it will give you meal a perfect amount of added flavor.

A little bit about the Nacho creation. My SIL and I were out to lunch one afternoon before a movie and we ordered these "Irish Nachos" to split. We were SO pleased with them that I had to tell my Mom all about them. They seemed to fit in really well with the March menu- so Mom recreated them and they were fantastic!
How-To make the Irish Nachos: Layer (any kind of) potatoes- we used waffle fries on a pan and bake per bag instructions. Then layer with cooked shredded corned beef, crisp (washed and drained) sauerkraut, shredded swiss & cheddar cheeses. Bake until cheese is melted and bubbly- top with 1,000 Island dressing! YUM!

Also fun about cooking class, Sally a fellow MN Blogger was there again. I am loving that she is now a regular for classes. I made sure we got a picture together before the night was over. **Note for all MN Bloggers out there. I also got to get a little bit of baby time in- Kristina brought baby #2 Kellan to class JUST for me to hold him ;) I was nice and shared him and to be 100% honest handed him over as soon as he was done unloaded a MAJOR poopy diaper- he went back to mommy for that changing!

We can't finish class without a dessert! We made super easy donuts! All that was needed was a can of Pillsbury Grand biscuits, cinnamon, sugar, butter, green sprinkles, 1 large circle and 1 small circle cookie cutter. Cut, butter, coat in sugars and bake!

Well that about wraps up this post, I am officially too hungry to go on... this ALWAYS happens!
Looking forward to April, another FUN month of cooking 'breakfast for dinner' in the kitchen!!
