Muffin Pan Meatloaf

I often make meatloaf for my husband and B1 and B2 have tried it on a few occasions.

I love this idea of making mini meatloaves for toddlers. I have wanted to try this for a while and have finally got around to it. Using a muffin tin, it made the perfect size meatloaves for little hands.

Ingredients:

500gms of mince. (Use whatever type of mince you like. I usually use beef mince, though this time I used turkey mince. I have also used chicken mince and pork mince in the past).

1 cup breadcrumbs

1 Egg

1 grated carrot

2 sticks of celery diced

1 onion diced

3/4 cup Tomato paste

This made a large meat loaf for hubby and 6 muffin size meatloaves for the twins.

Prep time: 20 minutes

Cooking time: approx 30-35 minutes for toddler size, 40-45 minutes for large.

Method:

Pre heat oven to 180 degrees.

Mix mince, breadcrumbs, egg, celery, carrot, onion and 3 tablespoons of tomato paste together in a bowl.

Spray muffin tray with cooking spray.

Fill your muffin tray with mix, filling each cup just below the top.

Spray your loaf tin with cooking spray. Place the remaining mix into the loaf pan (I used a rectangle crockery dish) and press down firmly.

Place in to the oven. After 25 minutes (or when they mini ones are firm to touch) take out the muffin tray and spread some tomato paste over the tops of each mini meatloaf. Return to the oven for another 5-10 minutes.

After 35 minutes (or when it is firm to touch) take out the large meatloaf and spread the remaining tomato paste over the top. Return it to the oven for another 10 minutes.

  

B1 and B2 loved these. I wasn’t sure how we would go as they have been a bit fussy of late, but as they ate I turned around to wash a few dishes and when I turned back both of their muffins were almost all gone
