Munchie Mondays ~ Chicken and Spinach Pasta Bake

I won’t lie to you, I have nothing for today, so I went on Pinterest and found the most amazing looking recipe I could find at 8am…this one made my stomach growl, and I am definitely going to make if for my family when they get here this week!

So here we go!!

Munchie Mondays ~ Chicken and Spinach Pasta Bake

Ingredients8 oz uncooked rigatoni1 tablespoon olive oil1 cup chopped onion1 (10 oz) package frozen spinach, thawed3 cups cubed, cooked chicken breasts1 (14 oz) can Italian-style diced tomatoes, drained1 (8 oz) container Philadelphia chive & onion cream cheese½ tsp salt½ tsp pepper1½ cup shredded mozzarella cheeseDirections: Prepare rigatoni according to pkg directions.Fry onion until translucent in olive oil. Place in large bowl.Drain chopped spinach well, pressing between paper towels.Stir in rigatoni, spinach, chicken, & next 4 ingredients into onion in bowl.Spoon mixture into dish & sprinkle evenly with shredded mozzarella cheese.Bake covered at 375 for 30 minutes, uncover & bake 15 more minutes or until bubbly.Munchie Mondays ~ Chicken and Spinach Pasta Bake
