Munchie Mondays ~ Chicken and Spinach Pasta Bake

I won’t lie to you, I have nothing for today, so I went on Pinterest and found the most amazing looking recipe I could find at 8am…this one made my stomach growl, and I am definitely going to make if for my family when they get here this week!

So here we go!!

Ingredients8 oz uncooked rigatoni1 tablespoon olive oil1 cup chopped onion1 (10 oz) package frozen spinach, thawed3 cups cubed, cooked chicken breasts1 (14 oz) can Italian-style diced tomatoes, drained1 (8 oz) container Philadelphia chive & onion cream cheese½ tsp salt½ tsp pepper1½ cup shredded mozzarella cheeseDirections: Prepare rigatoni according to pkg directions.Fry onion until translucent in olive oil. Place in large bowl.Drain chopped spinach well, pressing between paper towels.Stir in rigatoni, spinach, chicken, & next 4 ingredients into onion in bowl.Spoon mixture into dish & sprinkle evenly with shredded mozzarella cheese.Bake covered at 375 for 30 minutes, uncover & bake 15 more minutes or until bubbly.
