This is to die for, super easy to make and melt in your mouth good…I doubled it for the party, there was more than enough for about 20 servings.
Ingredients:
- 4 egg whites
- 1 cup white sugar
- 1/2 tsp vanilla
- 1 tsp vinegar
- 2 cups whipped cream
- fresh fruit, strawberries, kiwi and blueberries are my favorite.
- 1/2 toasted slivered almonds, optional
Whip egg whites until they form peaks. Gradually add sugar, vanilla and vinegar. Continue beating until very stiff and sugar is dissolved ( I find this can take a while, even up to about 10 minutes with mixer on med high, you don’t want it to be grainy…test it first, like I mean stick your clean finger in the bowl and taste it…really it’s a must.) Spread onto a cookie sheet with parchment or wax paper in a circle slightly smaller than desired size. (I did mine in a square because I am a rebel…) Bake for 1 hour at 275 degrees. Turn off oven and leave meringue several hours to dry. Top with whipped cream fresh fruit and almonds. Enjoy!!
