You thought I forgot, didn’t you?
Well I have totally lacked at posting it, that is for sure, but I have decided for the amount of totally amazing food we have been consuming, I should at least share some of our joy, right?
This week, due to summer and all, I am doing an amazing version of Arugula salad.
I could live on this…in fact, I might. Maybe the muffin top will disappear a bit.
Firstly…
You need fresh or baby Arugula. I am making enough for two people with this recipe.
So just use as much as you will personally eat.
Grated Parmesan. Good stuff, not cheap. Trust me on this, it matters.
Toasted slivered almonds, or whatever toasted nut strikes your fancy, be creative!
I also added wee cucumbers out of the garden and fresh wee zucchini, slice up a hard boiled egg too if you like!
Ok…for the dressing. So easy. So amazing.
-2 tbsp of fresh squeezed lemon. Don’t cheat and use bottled stuff. I will find you.
-1 tsp of balsamic vinegar
-3 to 4 tbsp of olive oil
-sea salt and fresh ground pepper to season
Gently toss the Arugula in the dressing until covered (save any left in the bottom dressing), dish it out onto your beautiful plate, because that matters too. Add your other ingredients on top of this, and the left in the bowl dressing.
Eat.
You will be in love.
And healthy.
