I have embellished this recipe to new heights of delicious. I found the original recipe on Martha Stewart’s page while googling.
Nothing makes me happier than cooking Martha under the table.
This recipe did just that.
Serves 4. Prep time 25 minutes.
What you need:
- 2 cups new pototoes
- 1 1/2 cups fresh garlic scapes (roughly chopped)
- 1 cup brussel sprouts
- 6-8 slices of bacon
- oil for cooking
- 1 tbsp butter
- salt and pepper to taste
What you do:
Boil the baby potatoes for about two minutes. Turn off burner, add the chopped garlic scapes to the hot water and potatoes. Let sit for ten minutes in the water.
Steam the brussels for approximately 2 minutes in steamer over hot water.
While you are waiting chop raw bacon into small pieces.
Drain potatoes and garlic scapes…separate the two and put scapes to the side for now, chop the wee potatoes in half… add to a frying pan with about a tablespoon of chosen oil and bacon.
Cook potatoes and bacon until crispy and brown on medium heat, about 6 minutes.
Add the tablespoon of butter, garlic scapes and brussels. Cook until everything is crispy and tender. Approximately three minutes.
The lamb chop was a bonus.
Enjoy!!
