Nightswimming with Explosions In The Sky

Hidey ho! Did everyone have a good Fourth of July?

Somehow I lost one of my contacts and was walking around like a blind bat all day. I am not used to wearing my glasses outside! Thankfully, my friend Jennifer has the same (horrendous) eyesight I do (eye soul mates do exist, it seems) so she let me have a couple of hers.

B, Jenny and my cooking crew made dinner last night, and a patriotic feast it was!

We were on appetizer duty and made three different types of hummus: lemon garlic, garlic-free paprika, and rosemary lemon. The rosemary lemon, though kind of different, was definitely a hit. Gotta get our rosemary plant growing again!

Our meal was very American…

Burgers and dogs!

Veggie burger for me, on grilled bread with jack cheese, avocado, tomato, pickles and mustard. On the side: cabbage slaw, mixed greens, and avocado-corn salad. Simple and delicious!

After dinner, we went down to the beach to watch the sunset. It’s still light at 10 PM here!

The fireworks were lovely this year. They were especially spectacular from our particular view… we decided to go for a night swim while the sky was exploding above us. (Just watch out for falling ash.)
