So today is Shrove Tuesday...or as it's more commonly known in this house...PANCAKE DAY!
I've seen lots of mums on social media this week say that they don't really like Pancake Day as making pancakes with kids can be a bit of a faff, and although I do completely relate to that - I do tend to force myself to get involved as I remember how exciting pancake day was to me as a child and it's something I want my kids to experience too.
For me as a kid it was less about the eating of the pancakes and more the chance to toss the pancake that gave me a thrill - would it get stuck on the ceiling like my Dads had one time?! Or would it catch the edge of the pan and break in half?! The nervous butterflies would dance around in my tummy when my turn to flip it came, and ohhh the relief when it landed safely back in that frying pan!
So this evening I'll be spending a good half an hour or so in the kitchen making pancakes on demand and letting the kids take turns to help me flip them...and if you're going to be doing the same, you might be in need of a quick and easy recipe!
When it comes to choosing a pancake recipe things can quite confusing as there are SO many variations out there - it seems that all countries and cities do their pancakes slightly differently, from New York Butter milk pancakes to Hungarian Palacsinta Pancakes - there are so many options to choose from! It can be almost as difficult as deciding where to go on holiday.
We decided to go with French style crepes as, much like a holiday to France, they don't take too long and they are simple but thoroughly enjoyable!
All you need is:
1 cup of all-purpose flour
1 teaspoon of white sugar
A quarter teaspoon of salt
3 Large eggs
2 cups of Milk
2 tablespoons of butter, melted
Then you just sift together the flour, salt and sugar before beating the eggs and milk together. Then add the flour mixture to the eggs & milk, beat together and add the melted butter.
Add some oil or butter to a medium sized frying pan over a medium high heat, when the pan has warmed up add 2 or 3 tablespoons of batter and tip/rotate the pan to spread it around evenly. Brown on both sides, and serve!
When it comes to toppings, you can get as creative as you like with a French crepe - banana and nutella, syrup, rainbow sprinkles, marshmallows and whipped cream or just good old fashioned lemon and sugar - they are delicious every which way!
