Anyone who knows me knows I am a big fan of chili. I could eat it once a week, actually I do. Something about chili in the fall and winter time that warms the soul and the bones. I especially love thick, meaty chili with a healthy helping of beans. Anything less and it just isn't chili. Or so I thought.
The hubs and I are experimenting with the Paleo diet. I decided to peruse a few websites and found a chili recipe that I think I could eat regularly. I decided to go off the beaten path a bit, and wanted to share my recipe with you all.
Ingredients: 2 lbs. lean ground beef 1 zucchini-chopped 1 medium onion
1 bell pepper-chopped 2 cans tomato 1 can tomato paste 1 can green chiles
1 cup of beef broth
add water until the consistency you desire
Instructions:
Add the beef to a non-stick skillet and brown
Add the onions and sweat for five minutes and add the bell pepper until soft
Add the canned tomatoes, zucchini, canned green chiles, and tomato paste and stir
Add the cup of broth and add desired amount of water
Bring to a boil
Reduce heat and simmer for 1 hour
We topped ours with Mexican cheese (not quite 100% Paleo) and it was delicious! I hope you enjoy this recipe as well.
