While browsing through Pinterest last night, I came across a recipe for Pancake bites.
They looked great and super easy. I thought B1 and B2 would love them. So I pinned it to my recipes board, and this morning I gave them a go.
I used my own pancake mix recipe and added the foods I had on hand.

They turned out wonderfully.
Here is what I did:
Make your pancake batter. I use 1 cup of flour, 1 cup of milk, 1 egg, 1 tablespoon of sugar and 1 teaspoon of baking powder. (I made a double batch today so I could freeze some to have on hand for quick snacks). Throw it all in a bowl and mix well.
Line your muffin trays with spray oil. I used a mini muffin pan for some toddler sized bites and then normal size muffin pans to make some bigger ones.
Pour your pancake mixture into the muffin trays filling them three quarters of the way to the top.
Chop up the ingredients you wish to add. I used banana, strawberries, dried apricots, ham and cooked asparagus.
Sprinkle each ingredient into the batter. I made individual fruit ones, then made some with both ham and asparagus together.
You could add any individual food, or a mixture of what ever you like into each pancake.
Bake in a preheated oven at 180 degrees for approx 15-20 minutes for the small size and 20-25 minutes for the larger ones. Or until golden.
The strawberry ones look delicious!
The ham and asparagus could be great for lunches.
