Power-Packed Crispy No-Bake Fudge Bites

You had me at Fudge Bites.

While I might have fallen on the beachbody bandwagon lately, I was back on board when I saw this Fudge-Bites recipe posted by my Beachbody coach and friend Elena.

I’ve been looking for a good tasty snack to have on hand, especially for my hubby who DOES work out so hard. So when I saw a recipe for Fudge Bites I knew I had to try it. And I happened to have everything on hand.

I made a few adaptations from the original recipe, but here is my version:

Power-Packed Crispy No-Bake Fudge Bites

Ingredients

1/2 cup peanut butter (a generous 1/2 cup measurement)

2 cups oatmeal

1/3 – 1/2 cup agave syrup

1/2 cup Kashi 7-whole grain Puffs cereal (which is what we happened to have on hand, or any “crispy rice” cereal will do the trick)

1 generous scoop of Chocolate Protein Powder (or Shakeology)

 

Directions

Combine oatmeal, cereal, and protein powder in a mixing bowl.

Measure out the peanut butter and put in a microwave safe bowl. Heat for 30 seconds or just until melted.

Pour over the oatmeal, cereal, protein powder mixture and combine well, adding in the agave syrup until you have a moist but crumbly mixture.

Using hands, roll the mixture into golf-ball sized balls and put on a plate or cookie sheet.

Place in the refrigerator for 30 minutes or just until firm and enjoy!
