Holiday's are hard.
Mostly because my schedule doesn't always allow me to take time off when the rest of the world does.
This Presidents Day, work be damned, I did.

I turned off the alarm and forced myself to lounge in bed with my hubby and Princess Maya.
Being that I haven't properly healed from my surgery, my hubby took Maya on her morning walk while I cooked brunch
Unlike any other time, I didn't ask my hubby for a menu suggestion.  I just cooked and kept it simple: Pancakes, bacon and coffee.

Brunch, pretty much, set-up the theme for rest of the day: Lazy Monday.
We lounged, All. Day. Long.  Even Maya gingerly placed her head on our laps while she slept for most of the day.
When snack-time rolled around, we wanted something light and simple.  Something that would fill our craving, but wouldn't give us that "too-stuffed-to-eat-dinner" feeling.
Rice crisps, coupled with hummus and cornichons was the perfect snack.

Our afternoon snack: The Real McCoy's all natural rice chips, with a side of hummus and cornichons.

By the time dinner-time rolled around, neither of us had left the house for more than a few minutes. We didn't plan on ordering out, or worse, leaving the house.
What we did, instead, was cook.  Yes, the both of us. Well, truthfully, hubby cleaned while I cooked.
We didn't plan on our day being this simple.  We actually had, instead, planned on running around on a belated Valentines Day "date out."
But, what we did, instead, was enjoy another day at home.
I guess, in a small way, we've realized that we don't always need to go out.
Staycations, even if they fall during a day that everyone has off, can sometimes be more enjoyable at stay home.
