Pumpkin Oat Squares

Now that it’s October it’s becoming harder and harder for me to ignore the fact that it is officially Fall.

I’m sure there are plenty of you jumping for joy over the cooler weather and the changing leaves but I, for one, am a Summer girl. Who doesn’t love barbeques and longer days and the beach?

Since resisting Fall’s impeding stronghold is futile, I decided to embrace it wholeheartedly in my baking this weekend.

That’s right it’s pumpkin time.

I’m sure you’ve seen a plethora of pumpkin recipes out there this week. Perhaps that makes me unoriginal but I will say that smelling pumpkin baking in my oven made me a little happier that it was Fall.

This is a super easy recipe that only requires 7 ingredients and can be whipped up faster than you can say, “I miss the long days of Summer.”

Pumpkin Oat Squares

Ingredients:

  • 2 cups rolled oats
  • 1 15 ounce can of pumpkin
  • ½ cup chocolate chips
  • 2 tablespoons agave nectar or honey
  • 1 tablespoon cinnamon
  • ½ tablespoon nutmeg
  • ¼ teaspoon salt

Method:

Preheat your oven to 350 degrees.

In a large bowl, combine oats, chocolate chips, cinnamon, nutmeg, and salt. Mix together a few times with a wooden spoon.

In a small bowl, whisk together pumpkin and agave nectar.

Add your wet ingredients to the dry ingredients and stir with a wooden spoon until combined.

Prepare a 9X9 baking dish with non stick spray. Pour in your pumpkin oat mixture.

Bake for 30 minutes.

Allow the pan to cool before slicing them into squares.

These squares are delicious reheated in the microwave. Love me some melty chocolate.

If Fall means that I can smell pumpkin and spices baking, maybe the next few months won’t be so bad…
