I have been wanting to try an alternative quick and easy lunch for Henry for a few weeks now, sandwiches can become pretty tiresome and this little dude very much likes to experiment with food and try new tastes and textures. Whilst this is fantastic, I think all mums want this of their little ones, it does make it that more challenging. What to concoct next?!
When endlessly scrolling through facebook one evening, one of those "tasty" video's popped up. They were of a courgette and broccoli fritter. Super easy and something I definitely wanted to have a go at. So a few weeks after this, whilst wondering what to make for lunch, I thought I would have a go at making my own fritters for Henry inspired by that video.
Now, I definitely cheated, but they still turned out amazing and are super healthy for little ones.... So here's what you need;
Four Eggs Handful of grated cheese Tesco's Lime and Corriander Rice and Quinoa mix Sunflower Oil
The first thing I did was to cook the Lime and Coriander Rice and Quinoa mix, by gently frying for a few minutes. This mix is a fantastic quick fix that I often turn to when cooking and will throw it into many different recipes. It's low fat, low salt and low sugar, so I knew it would be perfectly fine for my almost one year old.
I then got my Babymoov Nutribaby and added four cracked eggs along with a handful of cheese and blitzed for a couple of seconds. Literally just enough to give it a good mix.
Once the rice and quinoa mix was cooked, I then added it to the Babymoov Nutribaby. Again I blitzed for just a few seconds to ensure it was all completely mixed through and cut a few of the larger chunks of vegetables down.
Then I sprayed a baking tray with sunflower oil to ensure my fritters would not stick whilst cooking and then evenly add in the mixture.
I then grilled until one side was golden, flipped the fritters over and did the same on the other side.
Super quick and easy and they will stay in an air tight container for five days, which means you can batch cook for the week ahead - perfect for us busy mums!!
They appeared to be a hit with the boy, I thought they were pretty darn tasty too!
