Is there anything in life that brings a smile to even the saddest of faces more than a rainbow?!
No matter how sad I'm feeling, the sight of a rainbow never fails to bring me hope and comfort - which is probably why I find myself so drawn to anything bright and colourful! I am truly *obsessed* with rainbows - from rainbow prints in my home decor to rainbow prints in my wardrobe, I just can't get enough rainbow goodness into my life and luckily for me...my daughter is just as big a fan of rainbows as I am!
So when Swizzels very kindly offered to send me a hamper of their classic sweets and challenged me to come up with a recipe using them, I knew exactly which of the yummy goodies I was going to focus my attention on!
Now don't get me wrong - I very much enjoyed munching my way through all of the Swizzels classics such as Refreshers, Parma Violets and my childhood favorite - Double Dips! But I just had to choose good old Rainbow Drops for the recipe!

Rainbow Drops have been something I've loved ever since my own childhood and they've become a birthday party go-to treat for my own children too - there's just nothing else quite like them, and they are surely the most cheerful sweet treat in existence!
But how to use these retro treats in a recipe?! 
I immediately decided the best thing to do was to combine this childhood favorite of mine with another childhood favorite - fudge!
There's something about fudge that takes me right back to childhood seaside holidays, browsing the homemade fudge selections in the sweet shops and choosing which to try.
So I decided to try to make a rainbow fudge, using layers of brightly coloured white chocolate fudge topped with rainbow drops!
It turned out SO GOOD - the fudge is not only a treat for the eyes but it's absolutely delicious too, with the rainbow drops giving it a lovely sweet crunch!

If you fancy making some yummy Rainbow Drops fudge yourself, then just follow the recipe below.
Ingredients:
450 grams of white chocolate397 gram tin of condensed milkFood colourings of your choice (I used Wilton gel colouring)12 CM container lined with parchment paper
Method:
*Line your tray with parchment paper overlapping the sides to make it easier to lift the fudge out once set
*Break the white chocolate into chunks and put into saucepan, pour over the condensed milk and put on a low heat

*Melt the ingredients together gently (you don't want it to get hot, just warm), stirring constantly - once the chocolate has melted, stop stirring.  
*Working quickly while the fudge is still warm, divide the mixture into 5 or 6 small bowls. Add a drop or two of food colouring to each bowl, and stir together to dye the fudge into 5 or 6 individual colours.
*Place the fudge into the lined tub, smoothing out one layer of each color at a time. Try to smooth the layers with a spatula so they're as even as possible but don't worry too much - it'll look good regardless!
*Once the final layer is done, top it off with your rainbow drops. Cover the top layer in rainbow drops, and press down on them a little to ensure they set into the fudge.

*Chill the fudge for 1-2 hours in the fridge. Once set, cut into chunks and enjoy! (Your fudge will keep in the fridge for about a week...but I bet it doesn't last that long!)
