{Recipe} Ang’s Healthy ‘Trifle’

I have seen some wonderful looking trifles in my time. I have never made one myself, though I do remember eating them at family Christmas gatherings when I was younger.  I love how you can see all the layers. I always thought they looked so pretty.

I am not a massive sweets fan. I would rather eat more of the main dish type foods than have dessert. But Christmas day is one of the times I usually have a few tastes of some of the different desserts on offer.

This year I decided to get creative and try to come up with a healthy version of the trifle.

I am happy to say it was a big hit. I think this might become my dish that I make each year. It was so simple to make and because it is so low in fat and KJs, I could have that bit more of it. Fruit and yoghurt are two of my favourite foods.

Ingredients:

1 box of jelly (2 sachets in a box)
2 mangoes, cut into cubes
2 cups of grapes
1 punnet strawberries, cut in halves
half a pineapple, cut into pieces
A 1kg tub of low fat vanilla yoghurt
1 handful of oats
1 handful of All Bran, crushed up with your hands.

Method:

Make the jelly as per the instructions on the box. Place on sachet in the bottom of the bowl for the trifle and one sachet in another bowl.

Once the jelly has set in your trifle bowl place a layer of fruit around the outside. I placed one strawberry then a few grapes then another strawberry etc. Then fill the middle with mango, pineapple and grapes.

Spoon on a layer of yoghurt and spread out over the top of the fruit.

Sprinkle a handful of oats and crushed All Bran over the yoghurt.

Then do another layer of jelly. Using your other set bowl of jelly, spoon it out over the top. Add more fruit on top, then another layer of yoghurt.

Place some more fruit on top to decorate how ever you like. Sprinkle a little more oats and All Bran on top.
