I love it when my experimenting in the kitchen goes well. I was thinking of making a meatloaf but I wanted to do something a little different. This beef and vegetable bake turned out beautifully.
Ingredients:
500g beef mince
1 carrot grated
Hand full of fresh parsley, diced
1 cup breadcrumbs
2 tablespoons tomato sauce
2 eggs
1/4 pumpkin, skin and seeds removed, sliced thinly
1 zucchini, sliced thinly
1 red capsicum, sliced thinly
1/4 cup grated cheese
1/4 cup BBQ sauce
Method:
Preheat oven to 180˚c.
Mix the mince, carrot, parsley, breadcrumbs, tomato sauce and eggs together in a bowl.
Spray your baking dish with cooking spray.
Line the bottom with the sliced pumpkin, then place a layer of the mince mixture over the top, pressing it down firmly.
Place the zucchini across the top, then layer the remaining mince mixture over the zucchini.
Place the sliced capsicum over the mince and sprinkle with the grated cheese.
Pour the BBQ sauce evenly across the top.
Place in the oven and cook for approximately 35-40 minutes.
